The demand of Hospitality and Tourism Activity is quite noticeable internationally and is on increasing pace around the whole world. Similarly, if any phrase characterizes the hospitality and tourism industry today it would probably be “constantly changing.” Worldwide recessionary conditions, globalization, industry-wide focus on sustainability and corporate responsibility are just some of the forces converging and resulting in widespread change. The result is an industry that requires future leaders in hospitality and tourism to be well versed in past, current, and emerging management practices.
Hence the sector demands competent personals based on proper strong academic background. It is in this context that Curriculum Development Center (CDC) has launched new course in Hotel Management 11 & 12 under management sector. Our attempt to cover CDC curriculum is this text book which primarily covers the Syllabus of Grade XI. Thus text compiled is the outcome of several books references, university hands out, several training manuals, observations and real time work experience, entrepreneurship and expertise management background to cope with students learning through both aspects as: theory and practical. We believe the important activities, project and exercise incorporated along with the subject matter will further enhance student’s knowledge, skills, attributes and hospitable attitude pushing them one step closer towards hospitality professionalism.
We believe this book to be realistic, understandable and fit completely with the Grade XI course. We also hope this text book acts as a stimulant for hospitality beginners as far their career perspective is concerned equipping them with basic etiquettes. The chapters are compiled in such a way which covers the introduction to tourism and hospitality as initials, followed by familiarization of catering sector, hotel organization and management with prime focus on four major departments’ insight and overview. So, every reader who goes through whether student or professional can find some value added to their newly or existing hospitality knowledge bank.
We express our wishes to acknowledge the considerable advice and encouragement we received from our respected hospitality expert Mr. Surya Kiran Shrestha while working on this project. We would also like to express our sincere gratitude to all experts, manager and publisher of the industry who added value to this book by giving valuable suggestion.
